Technical Details

French manufacturer Sitram produces commercial-grade, stainless-steel cookware for restaurant, hotel, and institutional kitchens worldwide--serious home cooks also use this cookware to advantage. On its Profiserie line's pot and pan bottoms, an aluminum disk sheathed in steel conducts heat rapidly and uniformly. Sitram cookware also goes safely into ovens and under broilers, and, designed to withstand rough treatment, its bright, shiny appearance lasts indefinitely. The bottoms don't warp, and this cookware is stain- and corrosion-resistant. And with no inside rivets to clean around, it scrubs up hygienically and painlessly. This is cookware for cooks who value heavy, bang-around durability over fancy design.

Braisiers such as this one offer versatility. In the oven or on top of the stove and covered with a lid (sold separately), this pan serves as a casserole to stew or braise meats, poultry, seafood, or vegetables. Popular for browning meats and rapidly reducing sauces and broths, it's also a sauté pan, a deep-frying pan, and a double-handled saucepan large enough (7.9 inches in diameter by 4-1/4 inches high) to handle many home-kitchen tasks. --Fred Brack

Sitram Profiserie 3.3 Liter Commercial Stainless Steel Braisier/Stewpot Customer Review

This was the second Sitram product I bought (first was an 8" frypan) and I use this handy little pot more than anything else in my cookware cupboard. As I live alone, I don't need a large pot most of the time for soups, chili, cooking vegetables, braising, etc., and this is a perfect size for one or two (maybe three or four) people. I love the fact that I don't have to turn the heat on high to get it to warm up. I don't worry about burning things in it because of the even, steady distribution from the aluminum core. It is easy to clean, and the handles don't get hot. It is better than a saucepan because the long handle on a saucepan takes up more room on the stove and in storage. It is a dream to clean, and if a few discolorations from heat appear, they can be erased in a swipe of Barkeeper's Friend. For that once-in-a-while need for a larger pot, I also have a 6 qt. size. Love it. Love all of them.
