I disagree with the previous reviewer, though I have not had to contact Sitram's customer service. That is because the Sitram pot I own (same line but 3.3 Quart) has performed flawlessly for 6+ years of regular use.

Sitram pots/pans hava a terrific thick sandwiched base and it provides optimal heat dirtribution on both electric and gas cooktops. I havent had any problems with the construction. Don't hesitate to try one of these saucepans, especially at the low Amazon prices!

Simple, but very effective. Small steam vent prevents lid from jumping/rattling while simmering. Just add a few "real corks" under handle or you'll always need to use a towel/oven mitt as the handle will be hot. Both the lid and the cork have had no problems being run through the dishwasher.

I bought the same item from Costco (Business division)--same Sitram part number-- for 13 bucks instead of Amazon's 22 bucks.

Decently designed and made, very light weight, with a tiny vent hole near the edge. The finish is polished, not brushed like the Profiserie pots. It fits all the 28 cm rim diameter (so-called 11 inch) Sitram Profiserie pots. For me that means the 28 cm saute pan and frypan (both excellent). This Profiserie lid has a D shaped flat strap handle, with slightly smaller attachment pads than the Catering style. Perhaps the smaller spot weld pad is a weak point, but that's common to all inexpensive commercial grade lids. The more expensive 'Catering' lids have a rod shaped handle with 90 degree sides (a bit more roomy) and bigger attachment pads. The Profiserie rim edge is not actually sharp, nor rough, but it's pretty hard edged -- 'utility' grade, not luxury grade. So don't rub your hand against it. Or maybe smooth it into a nice radius with a steel or a ceramic stick or some emery paper. I haven't bothered. I physically checked a bunch of them, and some were a bit harder edged than others, but none were dangerous. I only comment on this because somewhere on Amazon there is a (no doubt accurate) complaint about a sharp edge on some Sitram object that slipped through QC.

All the Sitram Profiserie stuff is made to be 'rode hard' (although not 'put away wet') by French line cooks and should last me the rest of my life if I don't use it to pound nails or stun burglers.

Sitram Catering 11 Inch Commercial Stainless Steel Fry Pan Customer Review


I worked in restaurants for many years before going into the federal gov't, and good pans or bad pans would show their true colours over time.

For those w/ any arm/wrist/finger troubles, know that this pan may be uncomfortable to grip the handle, and may be a little too heavy. The handle is not rounded, but thin and rigid for lack of a better word. The Profiserie Sitram line is easier and "softer" to handle. However, this pan is a powerhouse, if you will, and can handle and endure heavy use in the kitchen, which is why it is "commercial grade" in both name and quality.

I would recommend using only wooden spoons and spatulas in this pan. Pure virgin olive oil is the best to use to get the pan going when sautéing, but extra virgin oo is good for lighter cooking or when simmering. Using a wooden spatula (never metal) will keep things from sticking just fine -- scrape when necessary w/ the wooden spatula. Do not forget to keep your wooden spatulas/spoons/cutting boards oiled too. (See my other reviews for suggestions on this topic)

Oil sprays are not necessary and only last so long anyway. This pan will become a valued partner in the kitchen. It is a joy to use knowing that you are using a high quality item. It is good to hand wash these pans and to use a little bit of "Bartenders Friend" to keep them shining like new. It is also good not to use high heat, but rather middle heat zones for smooth cooking.

The bottom line is that this pan is perfect, and beats a Tephlon or other nonstick pan in durability without trouble. In addition, unlike the nonstick pans, you do not have to worry about scratching it, no peeling of the coating, and best of all no chemical concerns leaching into your food -- there has been much debate/concern about this. I do not use nonstick pans for anything.

What I like most about this pot is that it has a copper bottom, sandwiched between two other layers of metal. I think that copper is the BEST metal for even heat distribution. Also, I like that it's a big pot that doesn't have a huge base that would overwelm the stovetop. (The diameter and height are each 9 inches.)

i have one requirement for a pot: it needs to fit my Aga stove. In other words, it should have a perfectly flat bottom and not be too tall to fit in the ovens. Since having the Aga installed several years ago, I had to replace the pots that didn't fit or work properly on the big flat plates that serve as burners.. All Sitram pots have a thick flat bottom which works perfectly on my stove. Since most of them are made for commercial use, they are extremely sturdy and come in many useful sizes. When I realized that one of my stockpots was too tall for my ovens, i got this pot, and it's perfect, since it's wide and low. This is a great pot for large batches of stew, soup, or stock. It cleans up nicely by hand or in the dishwasher, and a little stainless steel cleaner takes away any stains that do develop. My only (small) complaint is that the lids have to be purchased separately. As you may have guessed, I own several Sitram pots and pans and like them all. They're not expensive, either.

I love this saucepan. It is made heavy and very well built. The handle is welded so nothing gets stuck in any grooves. The bottom is very heavy therefore food doesn't stick or burn. I don't think you could harm this pan unless you ran over it with a steam shovel. I think you will love it as much as I do. It is my favorite pan.

Perfect for browning, braising and stewing large batches of chicken, pork, lamb or the like. This is a very heavy pot - so that's what makes it great for browning meat (maillard reaction) them simmering it in wine, broth and mire poix (carrots, celery and onion) plus lots of garlic.

This is now my standard "braising and stewing" pot and has replaced my 7.25 quart Le Creuset French Oven. It can take more abuse and is easier to clean. It is much wider and will brown more meat faster.

Granted that with the 13.5 in. cover, this rondeau will put you back about 0, this will pay for itself in only 2 outings with the family is a typical restaurant.

This is my best pot for cooking a large meal for my 3 hungry boys and their friends. I love it.

Sitram Profiserie 4.9 Quart Commercial Stainless Steel Saute Pan Customer Review


This stainless steel cookware has a thick aluminum disk bonded to the bottom surface. The thick disk provides good, uniform heating, and this piece is large enough that, on a small home burner, scorching at the bottom circumference (where the disk ends) is not a problem. Obviously, some proteins will stick to bare stainless, but that's great for making pan sauces, and I've had no trouble cleaning it by boiling some water in the dirty pan.

The handle is excellent. It is thick, round, and comfortable. On the stovetop, the handle stays cool. After the pan has been in the oven, the handle is of course hot (a fact I frequently forget), but it actually cools off quite quickly. The handle is welded, so there are no rivets to make cleaning difficult. This is a large, heavy pan, though, and I would have appreciated a helper handle on the opposite side.

The construction of the pan is definately commercial/industrial. It feels solid and durable. The edges of the aluminum disk have little or no bevel; that is, they edges of the disk meet the bottom of the pan at about a 90 degree angle. This gives the pan something of an unfinished look, and could lead to the edge of the disk catching on the burner grate as you put it on the burner or move it around. Also, the bottom surface of the aluminum disk is not polished--you can see the machining pattern. This makes it a little hard to move smoothly over the burner grate when sautéing.

I am quite happy with the pan, and will continue to buy other Sitram cookware.
