Technical Details


Leave it to the French to create the perfect saucepan with performance and style. The extra-thick copper-lined bottom heats fast and evenly; won't react with foods as aluminum does, and won't ever warp if left on the burner too long. The polished stainless steel will always look sharp, even with regular dishwasher cleaning. This saucepan's straight sides have a curved rim for accurately pouring a lunchtime soup into a mug or straining a beurre blanc. The handle is designed to direct the heat away and stay cool. A sticky label does not affect the function of this excellent saucepan. One of my favorites from my extensive Sitram Catering collection. I grab this often to heat up most liquid ingredients (e.g. broths, milk, sauces, etc.). Fits the approx. 7" burner of my ceramic cooktop perfectly. Heavy copper disk at the bottom is an excellent conductor and its weight keeps the pan from sliding all over the cooktop.

My way of removing the labels - wet label with mineral spirits then spray 409 cleaner. The glue will slightly bubble and you can remove it with a paper towel. Do this at your own risk since I do not know anything about the safety of 409 and mineral spirits reactions. This works for me for removing labels from all my Sitram cookware.

Finally, Sitram Catering is an EXCELLENT line of cookware. You won't see them listed as sponsors of many cooking shows but you'll see the cookware used in Sara Moulton's show, some of Food Network contests on TV, and in commerial kitchens. It's hard to find similar quality (especially with copper) in the same price range.
